Almond Applesauce Muffins
Mom's recipe.
Ingredients
- 1 1/2 to 2 cups chunky applesauce or other fruit sauce
- 3/4 c almond flour
- 3/4 c white pastry flour
- 1/4 tsp salt
- 1/2 c room temp butter
- 1/3 c + 1/4 c brown sugar
- 1/3 c white sugar
- 2 eggs
- 3/4 tsp vanilla extract
- 3/4 tsp almond extract
- 1/3 c rolled oats
- 1 tsp cinnamon
- 1 Tbsp oil
Procedure
Preheat oven to 350°F
- Microwave applesauce to room temperature.
- Combine in sifter:
- 1/2 c almond flour
- 3/4 c white pastry flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- In a medium bowl, cream:
- 1/2 c room temp butter
- 2/3 c brown/white sugar mix
- 2 eggs, one at a time — beat until each is incorporated
- 3/4 tsp vanilla extract
- 3/4 tsp almond extract
- Sift dry ingredients into wet and blend at low speed.
- Fold in 1 1/2 to 2 cups applesauce
- Fill muffin cups to the top
- Sprinkle each muffin with oat crumble blend (or cinnamon/sugar mix)
- 1/3 c rolled oats
- 1/4 c almond flour
- 1/4 c brown sugar
- 1 tsp cinnamon
- 1 Tbsp oil
- Bake in center of oven for 30 minutes (rotate pan halfway). Turn down to 340°F if muffins are getting too brown toward the end.
- Test center for doneness with toothpick. Remove tin to rack and cool 5 min, then remove muffins from tin to cool at least 1 hour before freezing.
