Leek and Potato Soup
Serves 4.
Ingredients
- 3 leeks
- 3 medium potatoes
- 2 Tbsp butter
- vegetable stock
- salt and pepper
Procedure
- Wash the leeks thoroughly and slice into thin rings.
- Wash and dice potatoes.
- Sauté the veggies in the butter.
- After a few minutes, add the stock.
- Simmer 30 minutes or until potatoes are tender.
- Season with 1 tsp of salt and black pepper to taste.
