Leek and Potato Soup

  1. Wash the leeks thoroughly and slice into thin rings.
  2. Wash and dice potatoes.
  3. Sauté the veggies in the butter.
  4. After a few minutes, add the stock.
  5. Simmer 30 minutes or until potatoes are tender.
  6. Season with 1 tsp of salt and black pepper to taste.
