French Lentil Soup

Procedure

  1. Chop all vegetables
  2. In a large pot, saute: onions, carrots, celery, zucchini. Salt vigorously.
  3. Sift through the lentils for stones
  4. Add lentils and water to cover. Bring to a boil and simmer.
  5. Add bay leaf, spices (totaling 2 tbsp in whatever propertions you prefer) and red wine vinegar.
  6. Cook an additional 30 minutes, or until lentils are tender. Stir and add water periodically as necessary to keep the lentils covered.
