Ingredients

Procedure

  1. Preheat oven to 425° F
  2. Preheat 11–12" cast iron or heavy skillet (rounded sides encourage better edge popover)
  3. Beat together: flour, milk, nutmeg, eggs
  4. Melt butter in preheated skillet, swirl to distribute to edges/sides of skillet.
  5. Pour batter into skillet distributing evenly.
  6. Bake 14-16 min (or until edge pop and begin to brown)
  7. Remove from oven and sprinkle with confectioner's sugar and a squeeze of lemon juice at the table.
