Popovers
Ingredients
- 3/4 cup white flour
- 3/4 cup milk
- 3 large eggs
- dash nutmeg
- 4 Tbsp butter
- lemon and confectioner's sugar for topping
Procedure
- Preheat oven to 425° F
- Preheat 11–12" cast iron or heavy skillet (rounded sides encourage better edge popover)
- Beat together: flour, milk, nutmeg, eggs
- Melt butter in preheated skillet, swirl to distribute to edges/sides of skillet.
- Pour batter into skillet distributing evenly.
- Bake 14-16 min (or until edge pop and begin to brown)
- Remove from oven and sprinkle with confectioner's sugar and a squeeze of
lemon juice at the table.
